The South Side gets the rib tip glory, but if you want post oak brisket and you live north of Madison Street, you have options. Here's the Texas style on the North Side and the north and northwest suburbs.
What you're looking for
Brisket sold by the pound, butcher paper, salt and pepper crust, post oak smoke. If the menu reads more like a steakhouse than a smokehouse, keep walking. Real Texas joints advertise the meat first and let the sides be sides.
How to order
Ask for a quarter pound of moist brisket and a sausage link as your starter. If the brisket is right, double back for ribs. Skip the sauce on the first bite, then use whatever they put on the table to your taste.
