If you like sauce heavy BBQ

Texas purists sauce on the side. That's their thing. If you want the sauce smeared in, dripping off the rib, soaked into the bread, you're a Kansas City or Memphis BBQ person. Own it. Here's where to eat.

What sauce heavy actually means

Kansas City: thick, sweet, molasses or brown sugar base, with tomato. Memphis: thinner, tangier, vinegar in the mix, often served wet on ribs. Chicago South Side mild sauce sits between the two, sweeter than Memphis, thinner than KC. All three are about the sauce being part of the bite, not a dipper.

What to order

  • Burnt ends. The sauciest possible meat. KC invented this for a reason.
  • Wet ribs. A slab mopped right off the smoker, sauce caramelized on top.
  • Pulled pork sandwich with extra sauce. Slaw on top, soak the bun.
  • Sausage in sauce. Hot links in mild sauce is a Chicago thing for a reason.
