I've done hundreds and hundreds of ribs, and I think I've tried every possible variation in the cook to see what gets the most compliments. So everything I do is probably sacrilege to many a pit boss. But this is what I do, and people often drive hundreds of miles to visit when I promise ribs. This is the method I settled on. I am sure others could do better by tweaking this or that. First I get the ribs out of the fridge, tear the membrane off and let them sit for maybe an hour to warm up. I get the smoker going right about the same time to let it get stabilized at 240F. If it's a cold day, I might set to 245F. I put them on the smoker with nothing at all. No rub, no salt, nada. Let them go 4 hours without even checking, then I might check every 20 minutes to see if they are don
I done it reverse. Used stick burners and open fire smoke styles since I was old enough to do it. Then I got a pellet smoker and haven’t looked back. I can make smoked food as good as my stick burner, and I don’t have to sit and baby a fire for hours and hours. I’ve done everything from whole hog and pork BBQ to brisket, chicken, turkey, ribs, squirrel, goat, venison, and more on a stick burner. No regrets on the pellet grill. To be honest, I get a better more consistent flavor out of the pellet grill. Weather conditions could mess with the stick burner so much it’s inconsistent. Also stick burners, if not tended to perfectly can way over smoke some foods. Haven’t had that problem with pellet grill.

I couldn't really find a good explanation anywhere online for how to go about doing this the right way...I could have just brushed off a little rust and painted it, but I wanted to do it the best way I could to make this baby last another 20 years. 1. I started taking off all of the hardware and the firebox, stack, etc 2. Went after 20 years or so worth of creosote with my torch and putty knives. 3. I enjoy the show, "Too Much Light Makes the Baby Go Blind" at the Neo-Futurists theater on Foster and Ashland. It's 30 skits in 60 minutes and can range from hilarious skits, to sad skits, to very personal skits, to inappropriate skits, to the most WTF skits ever. I think it's very different in many different ways (the price is $9 plus you roll a die, if they don't finish all the skits in 60 minutes then the show is over no matter what, you get random name tags, etc) and it's not a bad walk from the Berwyn red-line.
